  • 1 jar of Jean Martin 350g Eggplant Caviar
  • 4 pita breads
  • half a cucumber
  • a quarter bunch of chives
  • half a bunch of mint
  • half a bunch of cilantro
  • sesame seeds
  • 2 Greek yogurts

These pitas topped with our Jean Martin Eggplant Caviar and a fresh yogurt sauce make for a light, fragrant appetizer with Middle Eastern flair.

Preparation

  • Dice the cucumber and finely chop the chives, mint, and cilantro. Toast a handful of sesame seeds.
  • Combine everything with the Greek yogurt. Season with salt and pepper.
  • Warm the pita breads in the oven for a few minutes, then fill them with 2 tablespoons of Eggplant Caviar and 2 tablespoons of the yogurt mixture.
  • Serve as an appetizer with a salad.

Our tip

Always toast sesame seeds dry over low heat, keeping a close eye on them: they color very quickly and have much more flavor once toasted.

Variation

Add a few diced fresh tomatoes for extra freshness and color.
