Lunch breaks have never been easier! This gourmet lunchbox combines the flavors of Provence with fresh ingredients: fusilli with Jean Martin Eggplant Riste, baby greens, feta, and pumpkin seeds, followed by a fruity touch with peach, honey, and almonds.

The Eggplant Riste, prepared with fresh eggplants, tomatoes, onions, and aromatic herbs, is enough to flavor the pasta in just a few minutes. An ideal recipe for a work lunch or for on-the-go, which can be prepared the night before if needed.

Preparation

1. Cook the fusilli in a large pot of salted boiling water according to the time indicated on the package.

2. Drain the pasta and mix with Jean Martin Eggplant Riste. Let cool slightly before placing the pasta in the lunchbox.

3. Rinse the baby greens and place them in a separate compartment. Add the crumbled feta and a few pumpkin seeds.

4. Cut the peach into wedges or small pieces. Place in a third compartment with a drizzle of honey and a few slivered almonds.

5. Add a few Calissons d'Aix to finish the lunchbox on a gourmet note.

6. Close the box and keep in the refrigerator until lunchtime. The pasta can be enjoyed cold or slightly warmed up.

Chef's Tip

For an even more practical lunchbox, prepare the pasta the day before and let it cool completely before mixing it with the Eggplant Riste. This makes it easy to transport and prevents it from drying out.

To keep the pumpkin seeds and almonds crunchy, add them at the last moment. You can also replace the baby greens with arugula or some lettuce leaves depending on the season.

Plant-based variation

For a plant-based version, replace the feta with a soy- or almond-based dairy alternative. The pumpkin seeds add crunch and round out this easy-to-prepare salad.

You can also add a few chickpeas to the pasta or salad to increase the plant-based protein content and make the lunchbox even more satisfying.

Pairings and side dishes

This take-along meal combines several Mediterranean textures and flavors: the melt-in-the-mouth Eggplant Riste with the pasta, the freshness of the baby greens and peach, and the crunch of the pumpkin seeds and almonds.

For a change of pace, replace the peach with a nectarine, apricots when in season, or an apple in autumn. As for drinks, a fresh lemon-infused water or sparkling water will perfectly accompany this lunch.
