Ingredients
for 6 to 8 people
  • 1 jar of Ratatouille 520g
  • 300g long-grain rice
  • 4 slices of dry-cured ham cut into pieces
  • Thinly sliced chorizo
  • 12 to 16 prawns
  • 1 lemon
  • Olive oil

Paella is traditionally Spanish, but we love to revisit it with a distinct Provençal twist: chorizo, dry-cured ham, prawns, and a generous dose of ratatouille to add creaminess and sunshine to the plate. It is the ultimate convivial dish, meant to be placed in the center of the table for everyone to help themselves.

To save time without sacrificing flavor, we use our jar of Jean Martin Ratatouille: the vegetables are already simmered to perfection, so you just need to stir them in at the end of the cooking process.

Preparation

  1. In a sauté pan, brown the chorizo slices and dry-cured ham for 1 minute, then set aside.
  2. Sauté the prawns until fully cooked (about 5 minutes), then set aside.
  3. Keep the cooking juices in the pan, add the rice, and brown it for 1 minute.
  4. Add the water (2 volumes of water for 1 volume of rice) and let it reduce for about 10 minutes.
  5. When the rice is cooked, add the ratatouille, chorizo, ham, and prawns. Season with salt to taste.
  6. Serve with lemon wedges.

Our tip

To achieve that characteristic crispy layer typical of paella (the famous "socarrat"), let the rice cook for 1 to 2 extra minutes over high heat at the very end, without stirring, before adding the ratatouille and other ingredients.

Variation

For an all-seafood version, replace the chorizo and dry-cured ham with mussels and squid. For a vegetarian version, remove the chorizo, ham, and prawns, and double the amount of ratatouille while adding chickpeas.

Pairings & suggestions

We love serving this paella with a chilled Provençal rosé or a light blonde beer for a relaxed meal with friends. A bit of toasted bread is perfect for mopping up the last grains of rice.

Storage

This paella can be kept for 2 days in the refrigerator in an airtight container. When reheating, add a little water or broth to the pan to prevent the rice from drying out. It does not freeze well due to the seafood.

Frequently asked questions

Can this paella be prepared without prawns?

Yes, you can replace them with mussels, chicken, or simply double the ratatouille for a vegetarian version.

Which rice should I use?

Round rice, such as paella or risotto rice, will yield the best results, but long-grain rice also works if you keep an eye on the cooking time.

Can I prepare it in advance for a meal with friends?

You can prepare the rice and the ingredients ahead of time and assemble everything at the last minute to preserve the textures.

Can this paella be frozen?

It is not recommended: the rice and seafood lose their texture when thawed. It is best enjoyed within 2 days.
