Bohémienne is a traditional Provençal specialty made from eggplants and tomatoes simmered for a long time. Similar to ratatouille, it is distinguished by its particularly melting and generous texture.

Our bohémienne combines eggplant, tomato, and bell pepper, gently confited in extra virgin olive oil to reveal the full richness of Southern vegetables.

Jean Martin has been a family cannery for 3 generations, becoming a reference in Provençal and Mediterranean cuisine. All our products are 100% natural, without colorings or preservatives, and we strive daily to ensure that at least 70% of the ingredients are grown in Provence.
