This savory French toast with black tapenade and brandade is our original way of twisting a club sandwich into a pan-fried version: indulgent and surprising, featuring our jar of Jean Martin black Tapenade.

Preparation

  • Generously spread 2 slices of sandwich bread with the black Tapenade.
  • Then spread the other 2 with the brandade, and assemble the two slices like a sandwich.
  • In a shallow bowl, whisk 2 eggs with 20cl of milk, salt, and pepper using a fork.
  • Heat 50ml of olive oil and 50g of butter in a frying pan.
  • Soak the sandwiches in the milk-egg mixture for 5 seconds on each side.
  • Then pan-fry them for 4 to 5 minutes on each side until golden brown.

Our tip

Do not soak the sandwich in the milk-egg mixture for too long, otherwise it may get soggy and fall apart during cooking: a few seconds on each side are more than enough.

Variation

Replace the brandade with crumbled smoked salmon for a lighter version.
