Zucchini linguine with mozzarella

Preparation

Cooking

Difficulty

Easy
Ingredients
for 4 people

These creamy zucchini and mozzarella linguine are our go-to weekday comfort meal: our Jean Martin Zucchini with Mozzarella jar does all the work, all you have to do is cook the pasta and plate it.

Preparation

  • In a pan, toast the pine nuts dry (without fat) for a few minutes until slightly golden. Set aside.
  • In the same pan, sauté the pancetta for 3 minutes. Pour the JM Zucchini with Mozzarella into a saucepan and heat over low heat.
  • Bring a pot of water to a boil, add salt, and cook the linguine as indicated on the package. Drain the linguine and mix with the zucchini and mozzarella.
  • Plate the linguine, pancetta, mozzarella pearls, pine nuts, and a few basil leaves.
  • Finish with a drizzle of olive oil and a little pepper (optional).

Our tip

Keep a little pasta cooking water before draining: it helps soften the sauce if it thickens too much as it cools. Always toast pine nuts dry while keeping a close eye on them, as they brown very quickly.

Variation

For a vegetarian version, omit the pancetta and add a few sun-dried tomatoes to add character instead.

Pairings & suggestions

An Italian white wine like Vermentino or a young Provence rosé pair very well with this gourmet dish.

Yes, tagliatelle or spaghetti work just as well with this sauce.

Can this recipe be made vegetarian?

Yes, simply remove the pancetta and add sun-dried tomatoes or sautéed mushrooms.

Can the sauce be prepared in advance?

Yes, reheat it gently and then mix it with the freshly cooked pasta when ready to serve.

This is not recommended, as the mozzarella-based sauce loses its texture upon thawing.
