  • 1 jar of Jean Martin Black Tapenade
  • Olive oil

These red mullet fillets coated with our Jean Martin black tapenade, quickly grilled, make for a refined appetizer bursting with Mediterranean flavors.

Preparation

  1. Purchase red mullet fillets that have already been filleted and deboned.
  2. Arrange the red mullet fillets, skin-side up, on a baking sheet brushed with olive oil.
  3. Coat each red mullet fillet with Jean Martin black tapenade and place in the oven.
  4. Leave in the oven on the grill setting for 3 minutes, then remove.
  5. Arrange 3 to 4 red mullet fillets per plate, placing an arugula leaf between each fillet, along with a few thin slices of raw radish and button mushrooms. Drizzle the plate with a few drops of olive oil.

Our tip

Keep a close eye on the grilling: 3 minutes is generally sufficient for these thin fillets, as overcooking them will quickly dry them out.

Variation

Replace the red mullet with sea bream fillets depending on availability.
