  • 200g ground veal, beef or lamb
  • 3 eggs
  • Mint
  • Chilli pepper
  • Brick pastry

This version of eggplant pillows, enriched with ground meat, is a more generous appetizer based on our Jean Martin Eggplant Caviar and crispy phyllo pastry sheets.

Preparation

  • Beat the 3 eggs and mix them with the contents of the jar of Eggplant Caviar.
  • Sauté the meat in a little olive oil. Add it to the mixture with a little chopped mint and chili pepper. Season with salt.
  • Distribute the mixture into 6 to 8 phyllo pastry sheets.
  • Fold the sides in and fold up to make small pillows. Bake for 15 minutes in a hot oven (200 °C / 392 °F).

Our tip

Let the sautéed meat cool thoroughly before incorporating it into the eggs and eggplant: this prevents the eggs from cooking prematurely upon contact with the hot mixture.

Variation

Replace the ground meat with minced lamb for a stronger flavor.
