This Thoïonade and grilled eggplant club sandwich is our gourmet picnic version: our jar of Jean Martin Thoïonade replaces classic mayonnaise for more character.
Preparation
Cut the eggplant into 5 mm lengthwise slices. Place them on a baking sheet lined with parchment paper and salt generously. Let rest for 5 to 10 minutes, then wipe the eggplant slices with paper towels.
Brush them with olive oil and bake for 20-30 minutes in the oven at 200°C.
Generously spread 4 slices of sandwich bread with Thoïonade, then layer on a few slices of grilled eggplant, a slice of tomato, a little thinly sliced red onion, and some arugula.
Spread the other 4 slices of bread with fresh cheese like Kiri and cover your sandwiches.
Cut them in half diagonally… and head out for a picnic!
Our tip
Salt the eggplant slices well before cooking and pat them dry thoroughly: this prevents a soggy sandwich once assembled.
Variation
Replace the eggplant with grilled zucchini, or add a hard-boiled egg for a heartier sandwich.
