Preheat the oven to 180°C.
Brush the bottom of a pie dish with honey and olive oil.
Cut the eggplant into slices and arrange them in a rosette pattern at the bottom of the pie dish.
Spread with eggplant caviar.
Cover with the pie crust, making small holes with a knife.
Bake for 20 minutes at 180°C, then flip the tart when it comes out of the oven. Season with salt and pepper.
Add a spoonful of ricotta in the center and arrange a few rocket leaves, fig wedges, pine nuts, then season with salt and pepper. It's ready to serve!
