Preparation

Spread a generous layer of eggplant riste over a shortcrust pastry.

Arrange a few sliced vegetables on top.

Bake for 30 minutes at 180°C (350°F).

Our tip

If you use water-rich vegetables (zucchini, tomato), let them drain with a little salt and then pat them dry before placing them on the tart to prevent the base from becoming soggy.
