A creamy shrimp risotto, enhanced by our Jean Martin Poivronade and a touch of mascarpone: a comforting dish that is a nice change from a classic risotto.
Preparation
Add the bouillon cube to a pot of boiling water.
Chop the ginger, garlic clove, and onion, and sauté them in a large, hot pan with a drizzle of olive oil.
Add the pre-peeled shrimp and brown them. Stir in the rice and sauté for a few minutes.
Gradually pour in the broth while stirring over medium heat.
Add the mascarpone and Poivronade. Sprinkle with fresh herbs and a bit of lime zest. Serve hot!
Our tip
Pour the broth in several stages, ladle by ladle, waiting until it is almost absorbed before adding more: this is what gives the risotto its creamy texture.
Variation
For a vegetarian version, replace the shrimp with sautéed zucchini cubes.
