For 4 people / 16 makis:

  • 1 jar of 100g Jean Martin eggplant caviar
  • 4 slices of sandwich bread
  • 4 slices of smoked salmon
  • 200g of brousse cheese
  • 1 tsp black peppercorns
  • 1 tsp pink peppercorns
  • 1 tsp savory

A gourmet twist on the classic maki: no rice here, but rolled sandwich bread topped with smoked salmon and our Jean Martin Aubergine Caviar. An original and easy-to-prepare appetizer.

Preparation

Mix the brousse cheese and the aubergine caviar, add the savory, ground black pepper, and crushed pink peppercorns.

Flatten the slices of sandwich bread using a rolling pin.

Spread the brousse/aubergine caviar mixture, then add a slice of salmon to each piece of bread.

Roll up the bread slices tightly and cut each into 4 pieces. Insert a toothpick into each maki to keep it from unrolling, and arrange them on a serving platter.

Our tip

Wrap each roll in plastic wrap and place it in the refrigerator for 15 minutes before slicing: the cuts will be much neater.

Variation

For a fish-free version, replace the salmon with thin strips of avocado.

These makis are best enjoyed as an appetizer with a glass of chilled dry white wine or a glass of Crémant.
