These sardine keftas simmered in our Jean Martin Bohémienne are a convivial and fragrant dish, sitting somewhere between Mediterranean meatballs and a Provençal vegetable stew.
Preparation
Preheat the oven to 180°C (350°F).
Coarsely blend the sardines.
Mix them with 6 tbsp of breadcrumbs and 3 tbsp of Bohémienne.
Add the finely chopped garlic clove and spring onion, then the egg.
Season with salt and pepper.
Shape into meatballs and roll them in the breadcrumbs.
In a baking dish, pour a base of Bohémienne and place the kefta meatballs on top.
Bake for 30 minutes.

Slightly dampen your hands before shaping the keftas: the fish mixture will stick less, and the meatballs will be more uniform.
Variation
Replace the sardines with mackerel according to your preference.
