Fougasse preparation:
Put the flour and salt in your food processor and mix, then add the yeast previously mixed with lukewarm water in a separate bowl.
Then add a small ladle of olive oil (the volume of an espresso cup) and the 100g of butter. Knead for 8 minutes at medium speed so as not to heat the dough; it's ready when it detaches from the sides of the food processor and remains very soft (it will hit the sides of the food processor). Let it rest at room temperature covered with a cloth for about 1 hour.
Then roll out the dough on a floured work surface; it should be soft but not elastic. Roll it onto a rolling pin and place it on a rectangular baking sheet with edges (or on the oven tray) and cover with a cloth for the second rise of about 30 minutes.
Make finger indentations all over the fougasse and spread the jar of Jean Martin Eggplant Cream and a little olive oil.
Bake for 20-30 minutes at 210 °C.
For serving:
Remove it from the oven and wait a few minutes for it to cool slightly before adding the roughly crumbled ricotta and rocket, then cut into regular pieces.
Fougasse or focaccia is a friendly recipe to share, so there's no need for an overly elaborate presentation. Serving it on a cutting board so that everyone can help themselves in a casual way will be the best solution.
