This Mediterranean buddha bowl is our favorite balanced and colorful lunch, made with falafel, fresh vegetables, quinoa tabbouleh, and our Jean Martin Hummus.

Preparation

Heat the falafel in the oven according to the instructions on the package.

Finely slice the zucchini, tomato, and cucumber. Wash the mixed greens.

In shallow bowls, place a bit of quinoa tabbouleh on the mixed greens, then add pieces of zucchini, tomato, and cucumber alongside.

Add a few falafels and marinated peppers. Drizzle everything with a splash of olive oil, season with salt and pepper, and sprinkle with fried onions.

When ready to serve, add the hummus to the center of the bowl.

Vary your vegetables according to the season!

Arrange each ingredient in small, distinct piles rather than mixing everything together: this is what gives the characteristic visual appeal of a buddha bowl and allows everyone to compose their own perfect bite.

Variation

As suggested, vary the vegetables according to the season: beets and red cabbage in winter, radishes and peas in spring.
