This tuna, feta, and Jean Martin eggplant Riste tart is a simple and hearty recipe, perfect for a quick family lunch.

Preparation

Preheat your oven to 180°C (350°F).

Roll out the shortcrust pastry into a tart pan and prick it with a fork.

Mix the eggplant Riste with the tuna and half of the crumbled feta.

Pour the mixture onto the pastry.

Bake for 30 minutes, until the tart is golden brown.

Sprinkle with the remaining feta once out of the oven.

Add a few fresh sprouts for a touch of freshness.

Our tip

Drain the tuna well before mixing it with the eggplant Riste: this prevents excess liquid from making the crust soggy.

Variation

Replace the tuna with flaked salmon for a different version.
