This creamy risotto with Jean Martin eggplant Riste is a simple way to bring Mediterranean flavor to a classic rice dish, without increasing the number of ingredients.
Preparation
In a saucepan, bring 1 liter of water to a boil and add 2 vegetable bouillon cubes. Reduce the heat and keep the broth covered.
In a large saucepan, sauté 250g of risotto rice (80g per person) in a little olive oil with a crushed clove of garlic. When the rice is translucent, deglaze with 20cl of white wine.
Add the broth to the rice, a little at a time as it is absorbed (about 50cl total), until fully cooked, which will take about 20 minutes.
At the end of cooking, stir in 350g of eggplant Riste, 2 large tablespoons of mascarpone, and 2 tablespoons of grated Parmesan; mix well before serving.
