This original lemon and anchovy pizza, given a twist with our Jean Martin anchovy spread, offers a surprising balance between acidity, saltiness, and the freshness of raw zucchini.

Preparation

Spread your pizza dough on a baking sheet.

Generously spread the dough with the anchovy spread.

Finely chop the red onion and arrange it over the anchovy spread.

Thinly slice the lemon and distribute the slices over the pizza.

Sprinkle a few sprigs of rosemary over the pizza.

Bake the pizza for a few minutes until the crust is golden and crispy.

Meanwhile, use a peeler to create zucchini ribbons and set them aside.

Once the pizza is out of the oven, arrange the zucchini ribbons on the surface.

Add a few extra anchovies for an even more intense flavor.

Place spoonfuls of ricotta on the pizza for a creamy, delicate touch.

Finish by arranging a few black olives on top of the pizza.

Our tip

Slice the lemon as thinly as possible (using a mandoline if you have one): this avoids overly pronounced bitterness during cooking.

Variation

For a milder version, remove the lemon slices after cooking rather than leaving them on the pizza.
