  • 1 jar of Eggplant Caviar 100g
  • 1 jar of Onion Confit 130g
  • 4 hot dog buns
  • 500g minced lamb or beef
  • 1 tsp Espelette pepper, 1 tsp ground cumin, 1 tsp turmeric, 1 tsp paprika
  • 3 tsp granulated garlic
  • Coriander, flat-leaf parsley

White sauce:

  • 2 Greek yogurts
  • ½ cucumber
  • ½ lemon juice
  • 1 drizzle of olive oil
  • Chives
  • Mint or coriander
  • Salt/pepper

Our homemade version of the hot dog: a spicy sausage made on the spot, topped with our eggplant caviar and Jean Martin onion confit, for a street-food dish revisited with a Provençal twist.

Preparation

Mix all the spices and herbs with the ground meat and form into 4 sausages.

Cook them in a pan with a little fat.

Open the bun and spread generously with eggplant caviar on one side and onion confit on the other.

Seed the half-cucumber and cut into dice.

Prepare a yogurt sauce by mixing the cucumber with all the ingredients listed for the sauce.

Place the sausage in the bun and top with sauce.

Our tip

Form the sausages to a regular size for even cooking, and let them rest for 2-3 minutes off the heat before sliding them into the bun: they will hold their shape better.

Variation

For a vegetarian version, replace the homemade sausage with a store-bought plant-based sausage; the toppings remain the same.
