These homemade sweet potato gnocchi, served with our Jean Martin Ratatouille, are a colorful and comforting vegetarian dish with a lovely autumnal touch.
Preparation
Peel and roughly chop the sweet potato and the potato.
In a pot of boiling water, cook the sweet potato and the potato for 15 minutes.
Drain and mash.
Add an egg, salt, pepper, and a pinch of paprika. Then incorporate 50g of parmesan and the flour gradually. Mix until a dough forms.
Roll into logs and cut to form the gnocchi.
In a hot pan, add the chickpeas and tomatoes with a drizzle of olive oil and a pinch of paprika.
Add the gnocchi and brown everything.
Pour in the ratatouille.
Serve with a few coriander leaves, some parmesan, and a few slices of golden beet for garnish.
Our tip
Drain the sweet potato and potato well; you can even let them dry for a few minutes in the pot over low heat before mashing: dough that is too wet will require much more flour and result in heavier gnocchi.
Variation
For a gluten-free version, replace the wheat flour with rice flour.
Pairings & suggestions
This dish goes well with a dry white wine or a light Provençal rosé.
