Preparation
Preheat the oven to 200°C.
Mix the margarine to give it a more malleable texture.
Gradually add the flour.
Grate the parmesan and incorporate it into the mixture.
Add the salt, pepper, and anise seeds. Mix until you obtain a crumbly texture.
Pour the ratatouille into small individual ramekins or a large gratin dish.
Cover with the crumble dough.
Bake for 15 to 20 minutes in the oven at 200°C.
Serve with a few fresh basil leaves.
Our tip
Work with cold margarine, taken straight from the refrigerator before use: this is what allows you to obtain a nice sandy crumble dough rather than a compact paste. If you like an extra crispy crumble, place it under the broiler for 2 minutes at the end of cooking.

For extra indulgence, add a few cubes of fresh goat cheese to the ratatouille before covering it with the crumble. For a lactose-free version, replace the parmesan with nutritional yeast.
