This cod with an anchoïade crust is both a simple and refined dish: a crispy, fragrant crust made with our Jean Martin Anchoïade spread, served on a bed of melting tomatoes.

Preparation

Preheat the oven to 200°C (400°F).

In a bowl, mix the breadcrumbs with the anchoïade spread.

Line the bottom of a baking dish with tomato slices.

Place the cod on top of the tomatoes.

Spread the anchoïade and breadcrumb mixture over the fillets to create a crust.

Bake for 20 minutes.

Serve this dish with an anchoïade potato gratin.

Our tip

Dry the cod fillets thoroughly with paper towels before spreading the mixture: the crust will adhere better and become crispier during cooking.

Variation

Replace the cod with saithe or monkfish depending on availability.

Pairings & suggestions

A dry white wine, such as a Bandol blanc or a Cassis, pairs very well with this fish dish.
