These beef meatballs with chestnuts and our Jean Martin eggplant Riste are a hearty autumn dish, served on a bed of coriander-scented rice.

Preparation

Finely chop the onion and garlic.

Mix into the ground meat.

Chop the coriander and add to the mixture. Season with salt, pepper, and add the smoked paprika.

Add a few crushed chestnuts. Keep some aside for plating.

Mix everything together and shape into meatballs.

Roll in flour and set aside.

Cook the rice beforehand and set aside.

In a very hot pan, brown the meatballs in a drizzle of olive oil.

Pour in the eggplant Riste and lower the heat.

Sprinkle with coriander and the remaining chestnuts.

Serve over the rice.

Our tip

Slightly dampen your hands before forming the meatballs: the ground meat will not stick, making shaping much easier.

Variation

Replace the ground beef with ground lamb for a more pronounced flavor.
