The original since 1981!
Known as Papeton or eggplant loaf, this great classic of Provençal cuisine remains a must-have. Our packaging has had a makeover, but its inimitable recipe remains the same: Fresh eggplants, black olives from Provence and a little garlic, to be prepared as a loaf accompanied by a tomato sauce with basil from Provence.

This preparation for Eggplant Loaf allows you to create an original recipe for about 4 to 6 people. It can be prepared the day before and served warm or cold with the sauce as an appetizer, starter or side dish.

Jean Martin is a family cannery for 3 generations, having become a benchmark in Provençal and Mediterranean cuisine. All our products are 100% natural, without colorings or preservatives, and we strive daily to ensure that at least 70% of the ingredients are grown in Provence.

Ingredients and nutritional values

Aubergine caviar (380g net): aubergine 81%, sunflower oil, Grossane black olive from Provence (1.5%), parsley, extra virgin olive oil, garlic, salt, pepper, savory, concentrated lemon juice.
Tomato and basil sauce (190g net): tomato 69%, tomato coulis 27%, basil 1.8%, extra virgin olive oil, sugar 0.7%, garlic, salt, pepper.

Storage and packaging

Store at room temperature. Once opened, keep refrigerated and consume within 3 days.
