These savory eggplant, fresh goat cheese, and hazelnut muffins are perfect for an original appetizer or a festive buffet, with their crunchy touch and melting center.

Preparation

Preheat the oven to 180°C (350°F).

Crush the hazelnuts and set a handful aside for garnish.

Mix the preparation with the eggs. Gradually add the flour and baking soda.

Add the crushed hazelnuts.

Mix everything together and pour into muffin tins.

Bake for 20 minutes at 180°C (350°F).

Let cool for a few minutes.

Add the fresh goat cheese on top of the muffins and sprinkle with hazelnuts.

Add a few edible flowers and pea shoots.

Our tip

Add the fresh goat cheese only once the muffins are lukewarm, not piping hot: this way, it will keep its creamy texture instead of melting completely.

Variation

Replace the hazelnuts with slivered almonds for a different and equally crunchy version.
