Castelas revisits the traditional practices of the elders of the Baux de Provence Valley to create "Noir d'Olive". This oil comes from 4 olive varieties from our orchards (Salonenque, Aglandau, Grossane, and Verdale) picked at full maturity and stored.
Then begins the delicate work of a slight fermentation combined with savoir-faire to rediscover the taste of candied black olive from our ancestors' millstones. The whole art lies in achieving this typicality without suffering its defects! It is recognized by its "chômé" or fermented nose, its truffle notes, and its sweetness on the palate.
