This savory zucchini and green tapenade tatin is an elegant and easy-to-make appetizer, perfect for sharing or serving in individual portions thanks to our jar of Jean Martin Green Tapenade.

Preparation

This recipe can be made in a large mold for a tart to share, or in individual molds by pre-cutting circles from the dough to the diameter of your small molds.

  • Preheat your oven to 200°C (400°F).
  • Slice the zucchini into thin strips.
  • Brush the bottom of the mold with honey and olive oil.
  • Arrange the zucchini strips at the bottom of the mold.
  • Add the ricotta over the zucchini, then spread the green tapenade on top.
  • Cover with the puff pastry and make incisions with a fork.
  • Bake for 20 minutes.
  • Unmold carefully and garnish with raw zucchini ribbons.

Unmold the tatin while warm rather than piping hot or completely cold: this is the ideal moment when it releases best without breaking.

Variation

Replace the ricotta with fresh goat cheese for a more pronounced flavor.
