Chicory Tatin Preparation
- Cut the chicory in half lengthwise.
- In a large skillet, melt the butter with the honey over medium heat. Place the chicory cut-side down and let it brown for 5 to 7 minutes, until nicely golden.
- Deglaze with balsamic vinegar, then add 1 tablespoon of sun-dried tomato cream.
- Simmer over low heat for 10 minutes, until the chicory is tender and slightly caramelized.
- Add a little water if necessary to prevent sticking. Season with salt, pepper, and fresh thyme.
Assembly and Baking
- Preheat the oven to 190°C (375°F).
- Arrange the chicory cut-side down on a baking sheet (or in individual molds).
- Brush the top of the chicory with 1 teaspoon of sun-dried tomato cream. Cover each chicory with shortcrust pastry, leaving about 1 cm (0.4 inch) of pastry around the edges. Using the tip of a knife, draw veins to create a leaf shape. Brush the top with the remaining juice from the pan for extra flavor and shine. Baking
- Bake for 25 to 30 minutes, until the pastry is golden brown and crispy.
