- Slice the onion. Wash the leeks, then cut them into rounds. Heat a drizzle of olive oil in a pan, then sauté the onion until translucent.
- Add the sliced leeks and cook over medium heat, stirring regularly. Pour in 1/2 glass of water, cover, and let simmer gently until the leeks are tender (they should remain in pieces, not pureed). Season with salt and pepper to taste.
- Add the single cream and mix gently.
- Preheat the oven to 180°C.
- Roll out the pie dough and spread the pissaladière base on it. Distribute the leeks over the dough, then fold the edges slightly.
- Bake for about 30 minutes, until the tart is golden brown. Serve hot, with fresh herbs and burrata if desired.
