  • 1 jar of Jean Martin Tomato Basil Sauce
  • 1 pie crust
  • 100g feta
  • 2 tomatoes
  • 1 eggplant
  • 2 zucchini
  • 1 yellow onion
  • 1 red onion
  • Olive oil
  • Salt
  • Pepper
  • Herbes de Provence

This vegetable tian-style tart is our simplified version of the Provençal classic: alternating summer vegetables on a base of basil tomato sauce, for a colorful and fragrant dish.

Preparation

Preheat the oven to 200°C (400°F).

Wash the vegetables and slice the onions, tomatoes, zucchini, and eggplants.

Roll out the dough into a dish and prick with a fork.

Spread the basil tomato sauce over the bottom of the tart shell.

Arrange all the sliced vegetables in an alternating pattern for a beautiful look, then add a drizzle of olive oil. Season with salt, pepper, and sprinkle with Herbes de Provence.

Bake for 40 minutes.

Once out of the oven, sprinkle with feta cheese.

Our tip

Cut all the vegetables to the same thickness (about 3-4 mm) for even cooking and a visually harmonious tian.

Variation

Add a few slices of fresh goat cheese halfway through cooking for extra indulgence.

This tart goes well with a green salad and a chilled rosé from Provence.
