This revisited pistou soup with seared scallops turns a comforting classic into a chic appetizer, ready in 10 minutes thanks to our jar of Jean Martin Pistou Soup.
Preparation
- Warm the pistou soup in a saucepan.
- Sear 6 nice scallops in a little olive oil in a very hot pan for 1 minute on each side. Season with salt and pepper.
- In a soup plate, ladle in the soup and arrange the scallops. Suggestion: add a few sprigs of samphire for presentation. Enjoy!
Our tip
Dry the scallops well before searing: a very hot pan and dry scallops are the key to a beautiful golden color without them releasing water.
Variation
Replace the scallops with pan-seared shrimp for a more economical version.
Pairings & suggestions
This refined soup is best enjoyed with a dry white wine such as Bandol blanc or Cassis.
