This vegetarian panini with grilled vegetables and our Jean Martin Sun-dried Tomato Cream is a complete and gourmet lunch, ready in 25 minutes.
Preparation
Preheat your oven to 200°C.
Slice the zucchini and eggplant into thin strips.
Arrange them on a baking sheet, drizzle with a little olive oil, and sprinkle with herbs de Provence, salt, and pepper.
Bake for about 15 minutes, until the vegetables are tender and lightly golden.
Meanwhile, generously spread the sun-dried tomato cream on the panini or focaccia bread.
Once the grilled vegetables are ready, assemble your paninis by adding the grilled vegetables, fresh spinach leaves, and sliced mozzarella.
Close the sandwiches and lightly brush them with olive oil.
Bake again for about 5 minutes, just long enough for the cheese to melt and the bread to become crispy.
Remove from the oven, cut in half, and enjoy immediately!

Do not cut the vegetables too thick: they will cook faster and more evenly in the oven, for a perfectly melting panini.
