- Roll the fillets tightly and secure with kitchen twine. Insert a small sprig of rosemary into the twine.
- Pepper lightly.
Cooking
- Steam the rolls for 4 to 5 minutes over low heat.
- Gently reheat the aubergine riste in a saucepan.
- Spread 2 tablespoons of riste on each plate, then place 3 rolls per plate.
- Add a few turns of pepper and lemon zest to enhance the flavour.
Tips and variations
You can replace whiting with cod or hake for variety.
