This zucchini and pesto risotto is a simple and fragrant recipe, where our jar of Jean Martin Pesto instantly adds character to a creamy rice dish.
Preparation
Grate the zucchini with the skin on (using a coarse grater).
Sauté them in a pan for a few minutes with a drizzle of olive oil.
Add the rice and let it brown for a few moments.
Add water equal to 2.5 times the volume of the rice. Add salt.
Cook until the water has evaporated. Stir in 10cl of crème fraîche and the jar of Pesto.
Serve hot with thin slices of prosciutto.
Our tip
Add the pesto off the heat, just before serving: prolonged cooking would cause the basil to lose its fresh aroma.
Variation
For a vegetarian version, replace the prosciutto with extra Parmesan shavings.
