  • 1 shortcrust pastry
  • 200g sliced smoked salmon
  • 1 lemon

This smoked salmon and Jean Martin Poivronade quiche is a simple three-ingredient recipe, perfect for a quick and tasty lunch.

Preparation

  • Whisk the eggs and mix them with the Poivronade.
  • Arrange strips of smoked salmon on the pre-pricked shortcrust pastry, then pour the mixture over it. Slice the lemon and place the rounds on top of the tart.
  • Bake in the oven at 210°C (410°F) for 30 minutes.

Our tip

Prick the pastry base well with a fork before filling: this prevents it from puffing up unevenly while baking.

Variation

Replace the smoked salmon with pan-seared fresh salmon cubes for a different texture.
