  • 2 wheat tortillas
  • Crème fraîche
  • Grated goat cheese
  • Lime
  • Cilantro
  • Mexican spices

These quesadillas with our Organic Jean Martin Aubergine Cream are a quick appetizer or lunch with Mexican flair, ready in 10 minutes.

Preparation

  • On a tortilla, spread 2 tsp of Organic Aubergine Cream, 1 tsp of crème fraîche, a handful of grated cheese, fresh cilantro, ½ lime juice, and Mexican spices.
  • Fold each of the 4 sides inward to form a small pouch.
  • Brown the tortilla in a pan with a drizzle of cooking oil on both sides.
  • Serve with a nice salad.

Our tip

Press down lightly on the quesadilla with a spatula while cooking: this helps the cheese melt properly and seals the folded edges.

Variation

Add a few red kidney beans for a more complete and generous quesadilla.
