Preparation
Preheat the oven to 180°C (350°F). Roll out the dough on a floured baking sheet.
Spread a thin layer of Eggplant Parmesan over the dough and bake for 10 minutes. Remove the pizza from the oven, add a generous second layer of Eggplant Parmesan, and sprinkle with ribbons of coppa.
Garnish with fresh basil leaves, shaved Parmesan, and olives.
Return to the oven for another 10 minutes at 180°C (350°F).
