These crispy phyllo pastry nests, filled with our jar of Jean Martin Eggplant Parmesan and an egg, make for an original and gourmet appetizer.
Preparation
- Fold the phyllo pastry sheets in half and cut out a circle with a diameter slightly larger than your ramekins.
- Arrange 4 layers of phyllo pastry per mold and brush with Jean Martin Pistou.
- Spoon 1 to 2 tablespoons of Jean Martin Eggplant Parmesan into each ramekin and crack an egg into each one.
- Bake for 15–20 minutes at 180°C (350°F).
- Top each mold with a handful of crumbled feta and a sprig of thyme. It’s ready!

Make sure to layer the 4 sheets of phyllo by offsetting them slightly: this creates that lovely ruffled nest effect and ensures a nice, crispy bottom.
