  • 1 jar of anchovy paste delight 100g
  • 1 kg of potatoes
  • 25cl of milk
  • 25 cl of full-fat fresh cream
  • 50g of grated cheese

This potato gratin with our Jean Martin Délice d’anchoïade is a generous and fragrant side dish, perfect for putting a twist on a classic gratin dauphinois.

Preparation

  1. Butter a gratin dish. Cut the potatoes into the thinnest slices possible and place them in the dish.
  2. Gently heat 250ml of crème fraîche and 250ml of milk in a saucepan. As soon as the mixture is hot, stir in 1 jar of 100g Délice d’anchoïade. Add salt.
  3. Pour over the potatoes until they are covered. Sprinkle with grated cheese.
  4. Bake at 180°C for 45 minutes to 1 hour.

Our tip

Slice the potatoes as thinly as possible, ideally using a mandoline: this ensures even cooking and a very tender gratin.

Variation

Add a few thin slices of onion between the potato layers for more flavor.

Pairings & suggestions

This gratin goes very well with a crusted cod or grilled meat, paired with a dry white wine such as Cassis.
