- Preheat the oven to 200°C (392°F).
- Peel and dice the sweet potato, cook it for 5 minutes in boiling water, then set aside.
- Slice the red onion and chop the sage. In a bowl, mix the onion, sage, coconut milk, sweet potato, and the zucchini and mozzarella jar. Season with salt and pepper.
- Pour the mixture into a gratin dish. Add spoonfuls of ricotta and sprinkle with breadcrumbs.
- Bake for 20 minutes at 200°C (392°F).
