  • 1 jar of artichoke cream 100g
  • 1 cod fillet weighing about 150g
  • 1 ½ teaspoon of olive oil
  • 1 teaspoon of fine breadcrumbs

This mini artichoke and cod gratin is a quick and refined hot appetizer, where our Jean Martin Artichoke Cream serves as a delicious alternative to a classic béchamel sauce.

Preparation

  1. Bring 30cl of milk to a boil in a saucepan: once it reaches a boil, add the cod fillet, turn off the heat after 1 minute, and let the fillet sit in the saucepan of milk for another minute off the heat.
  2. In a dish, flake the cod and mix it with a drizzle of olive oil, then place the mixture at the bottom of 2 ramekins.
  3. Top with a generous layer of Jean Martin Artichoke Cream, breadcrumbs, and a drizzle of olive oil.
  4. Place under the broiler and brown for 3 minutes.

Our tip

Do not cook the cod in the milk for longer than 1 minute: it will continue to cook off the heat, ensuring it remains tender instead of drying out.

Variation

Replace the cod with salmon for a different version.
