  • 1 sweet potato
  • 1 parsnip
  • 1 carrot
  • 1 potato
  • 1 slice of Chioggia beetroot
  • 1 pear
  • 1 turnip
  • 1 egg
  • 2 tablespoons of flour
  • 1/2 sachet of baking powder
  • Salt and pepper
  • Olive oil

These savory sweet potato waffles, served with roasted root vegetables, are an original and comforting vegetarian dish for autumn and winter.

Preparation

Peel the sweet potato and the potato. Steam them, then mash them to create a puree.

Add the egg, flour, and baking powder.

Season with salt and pepper.

Pour the batter into the waffle iron and cook 2 waffles.

Preheat the oven to 200°C.

Peel the parsnip, carrot, and turnip. Chop them roughly, arrange them on a baking sheet, and brush with olive oil. Season with salt and pepper.

Our tip

Drain the sweet potato and potato puree well after steaming: excess moisture would prevent the waffle batter from holding its shape.
