This pork tenderloin stuffed with chorizo and scamorza, simmered in our jar of Jean Martin Piperade, is a generous and easy dish that requires little supervision.
Preparation
- Place the tenderloin between two chopsticks, then slice it into thick slices.
- Insert slices of chorizo and smoked scamorza (or mozzarella) between the cuts.
- Pour the 600g jar of Piperade into a Dutch oven and sauté for a few minutes.
- Place the stuffed tenderloin into the Dutch oven, cover, and bake for 50 minutes at 180°C (350°F).
Our tip
Using two chopsticks on either side of the tenderloin while slicing prevents you from cutting all the way through: the slices remain attached and the roast keeps its shape during cooking.
Variation
Replace the pork tenderloin with a chicken fillet for a lighter version.
