These pissaladière-style empanadas combine the South American tradition of the stuffed pastry with our Jean Martin Pissaladière jar, for an original dish that's easy to share.

Preparation

Preheat the oven to 180°C.

In a pan, brown the chicken strips with a little bit of the pissaladière. Season with salt and pepper.

Roll out the dough and cut out 10 to 15 cm diameter discs using a cookie cutter or a bowl.

Fill the dough with the Pissaladière, place the previously cut chicken strips on top, and add a slice of brie.

Fold the discs in half and pinch the edges to close the empanada.

Brush the discs with egg yolk and bake for 10 minutes on a baking sheet lined with parchment paper.

Our tip

Pinch the edges well by folding them over themselves (like a hem) rather than just pressing down with a fork: the filling will be less likely to leak out during cooking.

Variation

For a vegetarian version, replace the chicken with sautéed mushrooms.

These empanadas can be enjoyed with a crisp Provence rosé or a light red wine, served as a main course with a salad.
