This crushed potato dish with our Jean Martin black tapenade is the perfect side to enhance a duck breast or grilled meat in a flash.
Preparation
- Peel and cook your potatoes in boiling water or in a pressure cooker.
- Once fully cooked, drain them and mash them coarsely with a fork or a manual potato masher. Season with salt and pepper.
- Add the crème fraîche and the black tapenade (at least 2 tablespoons).
- Mix and add a few small dollops of tapenade on top as a garnish.
- Serve piping hot with a duck breast or grilled meat.
Our tip
Mash the potatoes while they are still hot: they absorb the cream and tapenade better, for a beautifully creamy texture.
Variation
Replace the black tapenade with our Green Tapenade for a fresher version.
