For the Polenta Croquettes:

  • 2 Jean Martin Green Tapenade
  • 150g polenta
  • 600ml vegetable broth
  • 50g grated Parmesan cheese
  • 40g flour
  • 2 eggs
  • 80g fine breadcrumbs

For the roasted vegetables

  • 2 parsnips, 4 colorful carrots
  • 1 red onion, 4 cloves garlic
  • 1 yellow or red beet
  • 2 small fennels
  • Olive oil
  • Thyme, Rosemary, Salt, pepper

Polenta Croquettes

  1. Heat the vegetable broth in 600ml of water. Pour in the polenta gradually while stirring. Cook over low heat for 5 to 8 minutes until thickened.
  2. Remove from heat: add 2 tablespoons of olive oil, Parmesan, green tapenade, picked thyme, and pepper. Spread the still-warm polenta in a large rectangular mold to a thickness of about 2 cm.
  3. Let cool, then cover and refrigerate for at least 1 hour or overnight.
  4. Cut the polenta into small 4x4cm rectangles and coat successively in flour, beaten eggs, then breadcrumbs.
  5. Heat a little olive oil in a non-stick pan. Brown the croquettes for 2 to 3 minutes per side, until golden brown, and set aside on paper towels.

Roasted Vegetables

  1. Preheat the oven to 170°C.
  2. Peel and cut the vegetables in half or quarters depending on their size, except for the garlic.
  3. Arrange them in a large dish without touching each other. Brush with olive oil, add salt, pepper, and thyme. Roast for 45 minutes, until a knife point easily penetrates the vegetables.

Arrange the roasted vegetables, polenta croquettes, and a few thin slices of speck on the serving platter. Add a jar of tapenade to the table to accompany the croquettes.

We take the utmost care when shipping your jars. Each product is individually wrapped with protective materials and placed in reinforced boxes to ensure it arrives intact.
In the event of breakage or damaged product, contact us upon receipt with a photo: we will offer you a quick replacement or refund.
