  • 4 slices of artisanal sandwich bread
  • 4 tbsp Jean Martin eggplant caviar
  • 2 slices of ham
  • 80 to 100g grated cheese (mozzarella or Emmental)
  • 10g butter
  • Freshly ground black pepper

Our version of the croque-monsieur, twisted with our Jean Martin Aubergine Caviar: a quick and comforting dish, double-gratinated for extra indulgence.

Preparation

  1. Generously spread two slices of bread with the aubergine caviar
  2. Place a slice of ham, folded in two, on top
  3. Add the grated cheese
  4. Close with the other two slices.
  5. Delicately butter the outside of the bread
  6. Cook in a pan for 3-4 minutes on each side
  7. Add a little cheese on top
  8. Place under the grill for a few minutes

Our tip

The double-gratination (pan then grill) is what makes this croque stand out: the pan creates a beautiful golden crust, while the grill melts the cheese on top without making the bread soggy.

Variation

For a vegetarian version, replace the ham with slices of pan-fried mushrooms.
