Preheat the oven to 200°C (390°F).
Bake the butternut squash for 10 minutes to pre-cook it and make it easier to cut.
Cut it in half and remove the seeds.
Season with salt and pepper.
Brush with maple syrup.
Bake again for 15 minutes.
Chop the mushrooms and mix with the Lentil Curry.
Remove the butternut squash from the oven, scoop out the flesh from the center and add it to the mixture.
Stuff the butternut squash with the mixture and bake for another 5 minutes.
Once out of the oven, sprinkle with feta and a few coriander leaves.
Optionally, decorate with a few slices of yellow beetroot.
