This poultry ballotine in puff pastry, stuffed with our Jean Martin Gran’draille, is an elegant dish for a festive meal, served topped with tomato sauce and accompanied by mashed potatoes.

Preparation

Preheat the oven to 180°C (350°F).

Cut the puff pastry in half.

Lightly score a chicken breast to insert a few spoonfuls of Jean Martin Gran’draille, then close it before placing it in the center of a piece of pastry.

Fold up the corners, dusting the dough with flour, to form a tightly sealed pouch.

Trim the excess dough, turn over, and shape to form a smooth, uniform ballotine around the breast, then set aside on a baking sheet. Repeat with the second breast.

Let chill in the refrigerator for 30 minutes. Brush the ballotines with egg yolk and bake for 20 minutes.

Cut into thick slices and serve topped with Jean Martin Organic Thyme Tomato Sauce, accompanied by mashed potatoes.

The 30-minute rest in the refrigerator before baking is essential: it allows the pastry to firm up and prevents it from losing its shape in the oven.
